The family crafts top-quality pasta from their own wheat fields spanning 10 hectares in Le Marche, central Italy, where they've farmed for three generations. Embracing the unspoiled countryside, grain is harvested from June to July, rotating crops like sunflowers and fava beans for sustainability. Recognizing the importance of starting with the finest hard, durum wheat for nutritious, flavorful pasta, they cultivate our own wheat. The custom-designed, small factory nestled amidst the wheat fields allows them to meticulously control wheat quality and oversee every stage of pasta production. Utilizing bronze dies for their eleven pasta shapes, they achieve an artisanal, textured finish that enhances sauce adherence. Slow drying at gentle temperatures preserves the wheat flavor and nutrients, ensuring exceptional pasta quality.
